@torabhaig_distillery has been producing some really nice whiskies as of late. We're in a time where many single malt scotch releases that were once lauded and highly sought after have faced a slow degradation of quality namely in the form of lower ABV, chill-filtration and E-150 (caramel coloring). Obviously this is not the case across the board, but I can assure you that there has been a steep drop off when it comes to certain distilleries that were acquired by certain large conglomerates.
Thankfully that's not the case here. Torabhaig has been in full production on the Isle of Skye since 2017, the whisky is young (minimum aged 3 years as per scotch regulations) but the quality of the liquid is apparent and the transparency on the label is excellent. "Cnoc Na Moine" (Smoke & Brine) is the third release in their Legacy series. This is a heavily peated single malt made with Concerto Malted Barely that has a phenol content of 78.4 PPM and is aged in a combination of American ex-bourbon, American Oak Oloroso and PX Sherry casks before being bottled at 46% ABV with a residual phenol level of 19.7 PPM. It is non-chill filtered and can be found on-line for around $80.
The nose is rich with peat smoke, brine, sweet custard, cracked black pepper and red berries. The palate is full bodied and viscous with more notes of peat, black pepper, vanilla and hints of orange peel. The finish is long and focuses on the mid and back palate with more smoke, sea salt and some lemon notes.
This is a solid release from a young distillery. Their distillation process and long fermentation times really pay off. The peat smoke is prevalent but isn't over pronounced. It's less medicinal smoke than I expected and more of a sweet campfire smoke. The PX Sherry influence is there but it hovers in the background and doesn't dominate the pour. The sweetness from ex-bourbon casks enhances but doesn't take the wheel and drive the bottling off the cliff into bourbon town. Really just a well blended, wonderfully produced scotch from beginning to end and easily my favorite release from the distillery so far.
